Her barrier reef is second only in size to Australia’s Great Barrier Reef. On the mainland, unspoiled coast is backed by lush tropical forests and Mayan ruins. The people are the friendliest and quirkiest of any country on my beat. English-speaking and welcoming, it’s easy to integrate with the local community. They don’t care much for rules here. You can mind your own business in Belize with no unwelcome intrusion into your affairs by her government.

It had been more than 19 years since I had been to Belize. Back then it was a two-night stay as I traveled with my husband and four of his buddies. We hired a local to boat us to Ambergris Caye. Arriving late at night, we went directly to a restaurant that had white sandy floors, excellent jerk chicken, and watermelon juice. Instead of doors separating the bar from the restaurant—there were colored beads hanging from the ceiling. I never forgot it and it spoke to me over the years, so much so that we recently decided to go back and investigate if it was as beautiful as we remembered.

The jolliness, a year-round occurrence in Belize, kicks into overdrive this time of year. Cities, towns, and tiny pueblos erect giant Christmas trees in town squares and deck the city halls with colorful banners, proclaiming both “Merry Christmas” and “Feliz Navidad.” (The official language is English, but many Spanish speakers live here, too.)

Martinique, for instance, is virtually unrivaled for its gorgeous, tropical coasts. Sure, there are some English-speaking countries in the area, such as Barbados, the Bahamas, and Antigua—but those can be very pricey.
